MCA MIN 513 (M): Food service and hygiene
MIN 479 was withdrawn in September, 2015 and replaced with MCA MIN 513. MIN 513 references MSN 1846.
It requires all ships cooks, catering staff and other persons processing food in the galley to be suitably qualified in food hygiene (handling and storage of food), and food safety in catering. Catering staff is expected to have an awareness of food allergy and intolerance issues, and to have an understanding of avoidance of cross contamination.
Two points with particular relevance to yacht crew are:
- Deck crew are often expected to assist the galley and interior crew serving meals and beverages to guests. Per MIN 513, a Level 2 qualification is required
- Online courses are no longer recognized as meeting the learning outcomes and assessment criteria for food processing and catering
